Macro-Friendly Recipes: Pumpkin Spice Muffins

We are quickly approaching one of my all time favorite times of year, Fall! I love everything about the fall from the weather, holidays, apple picking, pumpkin picking, and when the stores in the shelves are filled with pumpkin spice flavored goodies. Even though we are still a month away from the official start of fall, I have started seeing tons of pumpkin spice flavored foods in the stores. When I was food shopping yesterday, I was way too excited about all the pumpkin spiced foods to come so I decided to start early on the pumpkin spice baking.

While I would have loved to buy the fresh, huge, delicious looking muffins from the store, I didn’t because I knew that one of those large muffins would be a huge hit to my daily macros. We love to recreate healthier versions of our favorite sweet treats. I actually came up with this recipe last year while pregnant. My major, major craving was for anything pumpkin spice. These muffins would make a great addition to any breakfast, a good mid-morning snack or even an after dinner sweet treat! The calorie and macro breakdown can be found at the bottom of the page!

Our regular healthy baking essentials:

When we bake with our macros in mind, we typically use all of the same major ingredients: protein powder, brown rice flour, coconut oil and organic cage-free eggs. For this recipe we also used canned, organic unsweetened pumpkin as well. We even decided to really splurge and used some dark chocolate chips as well. To work on being able to incorporate the chocolate chips, we weighed out and portioned them to be sure that each muffin contains exactly the same amount of chips. This way we are still able to enjoy our sweet treat and know that we are tracking everything accurately.

Our current protein powder of choice is Naked Nutrition We really love that it is a clean protein with no additives. For this recipe, we used the Less Naked Chocolate Whey. There are only three ingredients in this protein which is amazing! Some of the other popular protein brands have several ingredients some of which I don’t think I would be able to pronounce. Especially when indulging in treats, we like to keep it as clean as possible. If you haven’t tried out their protein powder we highly recommend it. They have several vegan options as well if you are dairy free!




Macro-Friendly Recipes: Pumpkin Spice Muffins

Indulge without the guilt, each muffin contains way less than 100 calories!

  • 230 g Canned Pumpkin (Unsweetened)
  • 1 large egg
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 scoops Less Naked Chocolate Whey (Naked Nutrition)
  • 3/4 cup brown rice flour (Bob's Red Mill)
  • 1 tsp baking powder
  • 1 tbsp dark chocolate chips
  1. 1. Preheat oven to 350

  2. 2. Weigh out your pumpkin and add it to a large mixing bowl

  3. 3. Add in the egg and blend together with the pumpkin (a hand-mixer is definitely suggested)

  4. 4. Melt your coconut oil if necessary and measure out 1 TBSP to add to your bowl

  5. 5. Add in your cinnamon, pumpkin pie spice, and protein powder and blend together

  6. 6. Measure out your flour and baking powder and add it into the bowl, blend together until all smooth

  7. 7. Measure out your dark chocolate chips and set them aside

  8. 8. Spray a muffin tray with non-stick spray and evenly distribute the batter throughout the tray

  9. 9. Add your dark chocolate chips to the top of each muffin

  10. 10. Place muffin tray in oven for 12 minutes

  11. 11. Let muffins cool off for 5 minutes before digging in and enjoying!

  • Calories: 73 calories
  • Fat: 2.25g
  • Carbs: 10.4g
  • Protein: 3.3g
