
With sports in full swing this week, I wanted to prep something that was quick, easy to make, easy to grab and actually tasted good. This Pepperoni Pizza Pasta Salad is one of our favorites because it comes together in under 30 minutes and makes busy week nights a whole lot easier. Each serving packs 25g of protein, 43g of carbs and 16g of fat making it a great option to fuel practices, games or those nights when you’re constantly on the go.
Make it Your Own
One of the reasons we love this recipe is how easy it is to customize. Swap in your favorite pasta shape, use regular or turkey pepperoni, change up the cheese, or add vegetables like cucumbers, peppers, olives, or onions. If you’re meal prepping for different family members, you can even make each container a little different. This version is how we made it this week, but don’t be afraid to make it work for your family’s preferences.

Need more than 4 meals? Simply double the ingredients! This recipe scales easily and stores well in the refrigerator, making it perfect for busy weeks, multiple athletes, or packing lunches for the whole family.

Pepperoni Pizza Pasta Salad Recipe:
Prep Time:

Macros (per serving)
- 25g Protein | 43g Carbs | 16g Fat
Ingredients:
- 200g dry tri-color rotini pasta
- 120g Polly-O Part Skim Mozzarella, cubed
- 1 package Applegate Turkey Pepperoni
- 320g Grape Tomatoes
- 4 Servings Ken’s Lite Northern Italian Dressing
Directions:
- Cook the pasta according to package directions
- While the pasta cooks, cube the mozzarella, halve the tomatoes, and slice the turkey pepperoni
- Drain the pasta and rinse under cold water until completely cooled
- Divide pasta evenly between 4 meal prep containers (roughly 106-108g/container)
- Top each container with: 30g turkey pepperoni, 40g mozzarella, 80g grape tomatoes, 1 serving Ken’s Lite Northern Italian Dressing
- Seal the containers and shake to combine/mix
