Parents of small children (or maybe its just us) can probably all agree that macaroni and cheese becomes a household staple and a fight free dinner option. Mac and cheese is probably my son’s favorite dinner, and while the box stuffed is good in a pinch and most homemade recipes are decadent and heavy (and time consuming to make) I’ve been looking for a lighter & quicker option.
Through trial and error I concocted my own “healthy” recipe for macaroni and cheese involving plain non-fat greek yogurt & reduced fat 2% milk cheese. So if you love macaroni & cheese (let’s be honest – who doesn’t) and are looking for a healthier way to make it then this recipe is for you! Feel free to get creative with it! One of our favorite things to do with this recipe is add some shredded chicken or other kind of meat to it!
Greek Yogurt Macaroni & Cheese
Make a lighter & healthier version of this classic comfort dish!
Ingredients
- 1 box pasta use your favorite shape!
- 1 5.3oz plain non-fat greek yogurt single serve cup
- 1 8oz bag of 2% reduced fat cheddar cheese
- 1/4 c water
Instructions

1. Boil Water & Cook Pasta according to box instructions
2. Strain pasta - do not rinse it!!
3. Return Pasta to the pot - don't have the burner on
4. Add the greek yogurt & shredded cheese to the pot and start to mix it up
5. Dump in the water & continue to mix until the yogurt & cheese has been well combined
6. Add desired seasonings (salt, pepper, etc.) and serve while hot!

- for a more "thick & creamy" macaroni and cheese sauce you can use a full fat greek yogurt or some milk in place of the water
